Cotija. This aged cheese (of elote, or grilled corn, fame) is for sprinkling with abandon for a salty, creamy topping to salads, tostadas, enchiladas, and more. Think of it as the Parmesan of Natural. Formally referred to as El Queso Cotija de Montaña or "Cotija," as it's better known, is one of the oldest cheeses to come from Mexico. Cheesemaking began with the arrival of the gold-seeking Spaniards in Mexico in the 1500s. Eventually they struck gold in a very remote, mountainous region of central Mexico, along the border of what Queso cotija is an artisan cheese made by hand; thus, every cheese is unique. This cheese usually comes in 28 kg (62 lb) cylinders with a cream-colored crust. It is a queso de montaña (cheese of the mountains) because the cheesemakers live in the mountains as high as 1,700 m (5,600 ft).
