It's been 18 months since Amy reviewed Paul Tamburrini's at The Macdonald Holyrood Hotel. That's a long time for a restaurant, especially in a place like Edinburgh where the competition is fierce, so it's interesting to see what's happened there. We'd been invited to come in for a tasting menu. This brasserie from Michelin-starred chef Martin Wishart and Paul Tamburrini has opened in Edinburgh's new town. It is an interpretation of the Parisian classic, where traditional French cuisine meets Scottish flavours. The interior has a relaxed continental feel with no tablecloths and stone flooring. Opened 7 July Cheese was an elegant flower of Tête de Moine, which Tamburrini had the sense to allow to speak for itself, unadorned, served with a lovely Sautern. And the dessert, warm chocolate mousse with milk and honey and a hidden heart of chocolate fondant was the pinnacle of puddings. Paul Tamburrini is head chef at The Honours Brasserie, one of the top restaurants in Edinburgh. Paul's first catering job was as an apprentice commis chef at Rogano in Glasgow. He has worked in some of the UK's most renowned Michelin star restaurants such as Marco Pierre White's L'Escargot Restaurant in London, Airds Hotel in Argyll as well All of these elements matter and it helps build up a level of passion and loyalty to the restaurant.
